Sample Recipe

Lazy Daisy Cake
-Anna K. Hruskovich, Whiting, Indiana

  • 2 eggs
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1 cup sifted cake flour
  • 1 tsp. baking powder
  • 1/8 teaspoon salt
  • 2 Tsp. butter or margarine
  • 1/2 cup milk

Beat eggs until light. Gradually add sugar and vanilla. Sift together flour, baking powder and salt; add gradually to the egg mixture, stirring after each addition until all flour is moistened and there are no lumps. Melt butter in saucepan and add milk, heating to lukewarm. Add this to flour mixture, stirring until smooth. Spread in square pan, 9x9x2. Bake at 350-F for 25 minutes. Spread with Lazy Daisy Frosting and place under broiler until lightly browned.

  
Lazy Daisy Frosting

  • 8 Tsp. brown sugar
  • 4 1/2 Tsp. butter
  • 3 Tsp. cream
  • 1 1/2 cups moist coconut

Combine all ingredients but coconut, and place over low flame to melt the soft ingredients. Stir well and add the coconut. Spread on cake as soon as it comes out of oven and place under broiler until lightly browned.
